Pizzeria Pagliacci (commonly Pagliacci Pizza) is a Seattle-based restaurant chain specializing in pizza. It routinely tops the Seattle Weekly list of Best Restaurants in Seattle.

Restaurants

Pagliacci has several small, neighborhood stores called "delivery kitchens" that have pizza available for delivery or pickup and a more limited menu.

They also maintain several pizzerias, on the Ave in the University District, Mercer Street on Lower Queen Anne, and on Broadway in Capitol Hill.These larger restaurants include sit down dining and sell pizza by the slice, as well as soups, salads, breadsticks, pasta and full-size pizzas. The restaurants are usually decorated with movie posters in Italian, and the delivery kitchens are of more modern architecture and design.

The newest Pagliacci location is the Bellevue Pizzeria, which is more formal than the other restaurants and has an even more expansive menu.

Style of pizza

Pagliacci's pizza is thin, somewhat like New York-style as opposed to deep dish Chicago-style. Dough is made fresh daily at the central commissary and used by all of the stores. Every pizza is slapped and tossed by hand and cooked in a brick-lined oven.

Toppings

The stores have the usual pizza toppings as well as specialty items that are regularly rotated according to season. They stock gourmet pizzas, with pears and gorgonzola cheese appearing on the menu, as well as pizzas with artichoke hearts.

The restaurant chain is noted for their use of Pacific Northwest ingredients. Most ingredients are either local or imported from Italy for authenticity (most notably for the traditional Pizza Margherita). This includes pepperoni and other meats from Salumi (Seattle's most famous charcuterie), Walla Walla sweet onion (served in late summer and early fall), and salmon.

Social presence

In recent years, Pagliacci has made a concerted effort to be more eco-friendly, using entirely biodegradeable or recyclable plastics for to-go containers, opting for less-harsh soaps and detergents, and purchasing green-power offsets from Seattle City Light and Puget Sound Energy. Most cleaning products are Green Seal certified, and even used pizza boxes can be composted.

Pagliacci also frequently supports good causes in the greater Seattle area. Ranging from corporate donations to charities, to hosting events in support of Pride Weekend, to allowing causes to hold car washes or other fundraisers on Pagliacci property, the company is very involved in the community.
